Apricot Mango Chicken

If you're not careful, the whole neighborhood may just line up at your door when they hear you're making Apricot Mango Chicken!
What You'll Need
- 6 boneless, skinless chicken breast halves (½ to ¾ pounds)
- 1/2 teaspoon salt, divided
- 1 (16-ounce) can apricot halves, drained
- 1 tablespoon brown sugar
- 1/4 teaspoon cayenne pepper
- 1 ripe mango, peeled, pitted and diced
What to Do
- Preheat the broiler. Coat a large rimmed baking sheet with cooking spray.
- Place chicken breasts flat on prepared baking sheet. Sprinkle with 1/4 teaspoon salt and broil for 12 to 15 minutes.
- Meanwhile, in a blender, combine remaining ingredients except mango and blend on medium speed until a chunky puree forms.
- In a small bowl, combine diced mango and the puree. Spoon mixture over the top of the chicken and broil for 8 to 10 more minutes, until chicken is cooked and no pink remains.
Note
Mangoes are available almost year 'round now in your supermarket produce department, but if you can't get one, you can substitute two fresh peaches here and it'll still be a hit.
