What You'll Need
- 1 tablespoon vegetable oil
- 1/2 cup chopped onion
- 1 garlic clove, crushed
- 1 1/2 teaspoon chili powder
- 1/4 teaspoon ground cumin
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
- 1/4 cup water
- 1 1/2 pound ripe tomatoes (about 2 large), cut into cubes
- 3 boneless, skinless chicken breast halves (about 1 pound)
What to Do
- In a large skillet, heat oil over medium-high heat; add onion and garlic, and saute until onion is transparent, about 5 minutes. Add chili powder, cumin, salt, pepper, parsley, water, and tomatoes; reduce heat to low, cover, and simmer 5 minutes, stirring occasionally.
- Add chicken breasts, cover, and simmer about 15 minutes, or until a fork can be inserted into chicken with ease and no pink remains, occasionally spooning sauce over chicken.
Note
Serve over hot cooked rice or pasta.

I would probably consider using canned diced tomatoes, with maybe half the juice drained. Yes, a good, ripe, fresh summer tomato is almost impossible to beat, but during a lot of the season those aren't reliably available.

This recipe is really good. Watch out if you use Mexican Hot Chili Powder. Also I found the tomatoes in this recipe produce a lot of juice, I would remove the chicken when cooked (set aside), then add 1 1/2 cups uncooked white rice. Cook until tender then add the chicken back to warm.

question - where do I find the receipe for seafood seasoning blend ? looked it up and only found a coctail sauce -

Try Old Bay Seasoning from the supermarket. It's touted for seafood primarily, but it can be good on most anything. And you don't have to blend it yourself.
