Chicken Dinner, Camp Style

This is a perfect time-saver 'cause it's a one-pan throw-together that tastes as if you must have stood over the stove all day long. Ha! No chance!
What You'll Need
- 1 (3- to 4-pound) chicken, cut into 8 pieces
- 1 tablespoon vegetable oil
- 1 3/4 cup water
- 1 (6 ounce) can tomato paste
- 1 (1.5 ounce) envelope spaghetti sauce mix
- 1 (4 ounce) can mushroom pieces, undrained
- 4 potatoes, quartered
- 1 green bell pepper, coarsely chopped
What to Do

In a large skillet, brown chicken in oil. Pour off grease.

Add water, tomato paste, and sauce mix; stir, until smooth. Stir in mushrooms and potatoes. Cover and simmer 20 minutes.

Stir in green pepper; cover and simmer an additional 10 to 15 minutes or until chicken and vegetables are tender.
Notes
You can make it Creole-style by adding hot pepper sauce or cacciatore-style by adding oregano and garlic. With a few different seasonings you've got a new dish every time and it's still just as easy.
