Chicken Rumaki

Rumaki used to be found only in Asian restaurants, but now I'm going to share a simple recipe with you, so that you can enjoy that unusual combination of flavors made right on your own grill.

What You'll Need

  • 6 boneless, skinless chicken breast halves
  • 12 bacon slices
  • 3/4 cup ketchup
  • 3/4 cup white vinegar
  • 1 cup firmly packed brown sugar

What to Do

  1. Cut each of the chicken breast halves in half again lengthwise. Wrap 1 piece of bacon securely around each piece of chicken and secure with a toothpick.

  2. In a small saucepan, combine the ketchup, vinegar, and brown sugar, and bring to a boil on the stovetop. Remove from heat.

  3. Preheat the grill to medium-high heat, then place the bacon-wrapped chicken on the grill for 6 to 7 minutes per side, until the chicken is no longer pink and the bacon is crisp.

  4. Remove from the grill and serve topped with the brown sugar sauce.

Notes

If you want a bit more "zip", add an additional tablespoon or two of vinegar.

RUMAKI IS MADE WITH CHICKEN LIVERS NOT BREASTS. WHAT IS GOING ON WITH THIS RECIPE??? PRETTY BAD START FOR ME WITH THIS SERVICE.
