Chicken Salad Tacos

It seems like most restaurants and delis serve chicken salad these days. So we can find it served on almost everything from hero or submarine rolls to bagels and even focaccia. But we haven't found one yet that serves it like this...taco style. Who knows? It might be the next food fad!
What You'll Need
- 1 (10 ounce) can chunk white chicken, drained and flaked
- 1 celery stalk, chopped
- 1/3 cup salsa
- 1/4 cup sour cream
- 1 teaspoon ground cumin
- 8 taco shells
- 1 cup shredded iceberg lettuce
- 1 small ripe tomato, chopped
- 1/2 cup (2 ounces) shredded Cheddar cheese
What to Do

In a medium-sized bowl, combine chicken, celery, salsa, sour cream, and cumin; mix well. Spoon evenly into taco shells.
- Top with lettuce, tomato, and cheese; serve immediately.
Notes
You can prepare the chicken salad and chop the vegetables ahead of time, then keep them chilled. That way, you're all ready for a quick and easy meal!
