Chicken and Biscuits

Think comfort food has to take a long time to prepare and cook? Nope! It's fast and easy when you know which convenience items to keep on hand. Our Chicken and Biscuits recipe is quick to make and is always quick to disappear!
What You'll Need
- 2 cups diced cooked chicken
- 1 (16 ounce) package frozen mixed vegetables thawed
- 2 (12 ounce each) jars chicken gravy
- 1 (16.3 ounce) package refrigerated buttermilk biscuits (8 biscuits)
What to Do
- Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
- In a large bowl, combine chicken, vegetables, and gravy; mix well then spoon into baking dish. Top with biscuits.
- Bake 15 to 20 minutes, or until hot and bubbly, and biscuits are golden.
Notes
We're lucky that we have options for buying already-cooked chicken for recipes like these. Use either a package of diced cooked chicken, or dice it yourself using a store-bought rotisserie chicken. Nobody has to know that we didn't slave in the kitchen for hours!

This is a great recipe. It's very easy and great for a stand-by favorite. I cook the veggies and gravy first for 15 min then add the biscuits for 10. I seem to like the regular size buscuits better. But, love the idea! This is just so great on those days you are too tired to do something complicated and my daughter loves it with the veggies. Thank you Mr. Food!

Instead of making uiscuits - I use 1- 16oz package refrigetated, oven ready 'Jumbo" size uiscuits Bake the biscuits on a cookie sheet,at 350 about 8 minutes - only until they begin to brown ! Remove biscuits from the oven and set aside for later. Meanwhile substitue 1 can gravy with 1 undiluted, can condensed cream of chicken soup - combine all ingredients (except the biscuits). Pour the mixture into a 9 X 13 aluminum throw-away pan (PAM optional) Bake covered at 350 for 40 minutes. After 40 minutes arrange the biscuits on top of the chicken mixture. Bake - uncovered 20 minutes more - or until the biscuits are golden. Let stand 10 minutes before serving. ENJOY! j
