What You'll Need
- 4 boneless, skinless chicken breast halves (1 to 1 pounds total)
- 2 teaspoons lime juice
- 1 Peel from a medium-sized lime, cut into 1/8-inch strips
- 3/4 cup apple juice
- 1 chicken bouillon cube
- 2 teaspoons cornstarch
What to Do
- Coat a medium-sized skillet with nonstick vegetable spray.
- Add the chicken and cook over medium heat for 6 to 8 minutes or until browned, turning once.
- In a small saucepan, combine the remaining ingredients over medium heat and cook for 3 to 4 minutes or until the bouillon dissolves and the mixture thickens. Pour the sauce over the chicken, cover, and cook for 10 to 12 minutes, or until the juices run clear and no pink remains.
Notes
For an extra-tropical flavor, try using Key limes when they're available. Key limes are native to the Florida Keys and are smaller, lighter in color, and more intense in flavor than regular limes.
