Chicken with Lemon Sauce

What You'll Need
- 1/2 cup dry bread crumbs
- 6 boneless, skinless chicken breast halves
- 1/2 cup mayonnaise, divided
- 4 tablespoons butter, divided
- 1/2 cup chopped onion
- 3 tablespoons all-purpose flour
- 1 1/2 cup chicken broth
- 1/4 cup chopped fresh parsley
- 3 tablespoons lemon juice
What to Do
- Place the bread crumbs in a shallow dish; set aside. Brush the chicken pieces with 1/4 cup of the mayonnaise; dip in the bread crumbs to coat.
- In a large skillet, melt 2 tablespoons of the butter over medium heat; add the chicken and cook for 15 minutes, turning occasionally, or until golden and done. Remove to a serving platter and keep warm.
- In a medium-sized saucepan, heat the remaining 2 tablespoons butter over medium heat; add the onion and sauté until transparent. Stir in the flour until well blended. Gradually stir in the broth. Add the parsley and lemon juice. Cook, stirring, until the mixture boils. Add the remaining 1/4 cup mayonnaise; cook, stirring, until hot. Spoon the mixture over the chicken and serve.
