Classic Chicken Cacciatore will be a winner with the whole gang - kiddies and all. Kitchen hero (that's you!) to the rescue!
What You'll Need
- 2 tablespoons vegetable oil
- 4 skinned and boned chicken breasts, cut into 1-inch pieces
- 1/2 cup chopped onion
- 2 cups spaghetti sauce
- 1 1/2 cup water
- 1 green bell pepper, seeded and cut into strips
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1 1/2 cup uncooked instant rice
What to Do
- Heat oil in a large skillet over medium-high heat. Add chicken and onion; cook until chicken is lightly browned, stirring often.
- Add spaghetti sauce and next 4 ingredients; stir well. Bring mixture to a boil; stir in rice. Cover, remove from heat, and let stand 5 minutes or until liquid is absorbed and rice is tender.
Notes
Cacciatore is Italian for 'hunter.' This version of the popular stewlike dish is prepared 'hunter-style,' using onion and herbs. The prepared spaghetti sauce makes it come together easy- and quick!
