Cranberry Chicken Loaf

This looks like an ordinary meat loaf, but it's an all-in-one holiday meal.
What You'll Need
- 1/2 cup firmly packed brown sugar
- 1/2 cup whole-berry cranberry sauce
- 2 pounds ground chicken or turkey
- 3/4 cup (6 ounces) evaporated milk
- 2 tablespoons bottled steak sauce
- 2 tablespoons ketchup
- 1 teaspoon prepared mustard
- 3/4 cup cracker crumbs
- 2 eggs
- Salt and pepper to taste
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder(or to taste)
- 2 tablespoons diced onion
What to Do
- Preheat oven to 350 degrees F.
- Grease a 9-inch loaf pan. Sprinkle the brown sugar over the bottom of the pan. Spread the cranberry sauce evenly over the sugar; set aside.
- In a large bowl, combine all the remaining ingredients; mix thoroughly. Shape mixture into loaf and set in pan on top of cranberry sauce. Pat down top of loaf until smooth and firm.
- Bake for 55 to 60 minutes or until done. Let set in pan for about 5 minutes, then invert loaf onto a serving platter. Makes 4 to 6 servings.
Notes
The sugar and the cranberry sauce combine to make a rich sweet-and-sour topping.

I got this recipe out of your cookbook, "The Mr. Food Cookbook" many years ago and it has been a WINNER from the get-go! The only thing I do differently is that I make sure that I cover the bottom of the 9x5-inch loaf pan with the whole-berry cranberry sauce (after I put in the brown sugar, of course). That way there's a little more of the cranberries on there. I also substitute 1 tsp. of onion powder for the diced onion since my husband isn't a fan of real onions. We serve this with some extra whole berry cranberry sauce on the side, mashed potatoes, and green beans. Just delicious!
