Curry Chicken

If you don't try the wonderful combination of Middle Eastern flavors, you'll really be missing out. This one is bound to please you, your family?in fact, anyone who is lucky enough to be invited to your table.
What You'll Need
- 4 tablespoons vegetable oil, divided
- 2 onions, finely chopped
- 1 chicken (2-1/2 to 3 pounds), cut into 8 pieces
- 1 tablespoon curry powder
- 1/2 cup white wine
- 1/4 teaspoon garlic powder
- 1/4 teaspoon thyme leaves
- 1/4 teaspoon ground nutmeg
- 1 can (14-1/2 ounces) whole tomatoes, drained
- 1 apple, peeled, cored, and cut into cubes
- 3 tablespoons heavy cream
- 1/4 cup raisins
- 1/2 teaspoon lemon juice
What to Do
- In a large skillet, heat 2 tablespoons oil over medium-high heat; add the onions and sauté until transparent. Remove the onions from the skillet; set aside. Heat remaining 2 tablespoons oil in the skillet, add the chicken, brown on all sides, and return the onions to the skillet.
- Add the curry powder, wine, garlic powder, thyme, nutmeg, and tomatoes, mix well. Reduce the heat and simmer, covered, for about 20 minutes. Add the apple, heavy cream, and raisins; cook for about 6 to 8 minutes more, or until chicken is fork-tender and no pink remains. Add the lemon juice, stir, and serve.

This turned out so very good!!!! I followed the recipe to the tee. Except I cook it in a crock pot. It turned out so very good! I made everything & let it sit in the frige over night. I will defently make this again. I gave the recipe to 3 people all ready.
