What You'll Need
- 2 tablespoons vegetable oil
- 8 chicken thighs, skinned
- 10 garlic cloves, coarsely chopped
- 1 teaspoon crushed red pepper
- 1/4 cup white vinegar
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 1/4 teaspoon ground ginger
What to Do
- In a large skillet, heat the oil until moderately hot. Add the chicken and cook until brown on all sides, about 10 minutes.
- Add the garlic and red pepper to the chicken; cook for 2 to 3 minutes, stirring occasionally. Drain off excess fat.
- In a small bowl, mix together the vinegar, soy sauce, honey and ginger; add to the chicken. Reduce heat and simmer covered for 15 to 20 minutes or until chicken is fork-tender and fully cooked.
Notes
Serve with rice. When cooked, the garlic becomes mellow and is not overpowering. However, if you prefer, you can start with 2 garlic cloves and 1/4 teaspoon red pepper. Adapt it to your own taste.
