Greek Isles Chicken Salad Pitas

I haven't been to Greece yet (and I hope I can get there soon), but I hear that the island breeze is always fresh and exciting. That fits with this recipe, 'cause it's also fresh and exciting!
What You'll Need
- 1 tablespoon olive oil
- 2 teaspoons lemon juice
- 1 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups cooked chicken chunks (about 1/2 pound)
- 1 can (2-1/4 ounces) sliced black olives, drained (1/2 cup)
- 1/2 cup (2 ounces) crumbled feta cheese
- 4 pitas
What to Do
- In a medium-sized bowl, combine the olive oil, lemon juice, oregano, salt, and pepper; mix well. Mix in the chicken and the black olives until well coated. Add the feta cheese and toss lightly.
- Cut the top off each pita bread and place 1/4 of the mixture inside each.
- If you'd like to serve these warm, place them in a 325 degree F. oven for 15 minutes.
Notes
Just before serving, you may want to add some chopped tomatoes and/or lettuce.
