Herbed Chicken

The easy homemade seasoning mix that makes our Herbed Chicken so flavorful, is a cinch to prepare. With the bonus of this being a main dish make-ahead, you can't go wrong.
What You'll Need
- 1/2 cup all-purpose flour
- 1/2 cup fine, dry bread crumbs
- 1 teaspoon paprika
- 1/4 teaspoon ground thyme
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 three- to four-pound chicken, cut into 8 pieces
- 1/4 cup (1/2 stick) butter, melted
- 1 tablespoon vegetable oil
What to Do
- Preheat the oven to 400 degree F.
- In a plastic or paper bag, combine the flour, bread crumbs, and seasonings, shaking to mix well.
- Add 2 or 3 chicken pieces to the bag; shake to coat completely. Repeat with remaining chicken.
- Pour the melted butter and oil into a 9" x 13" baking dish; add the chicken pieces. Bake, uncovered, for 30 minutes.
- Reduce the oven temperature to 350 degree F., turn the chicken pieces, and bake for 20 to 25 more minutes, or until cooked through and tender.
