Herbed 'n' Spiced Chicken

With all the different ways to prepare chicken, sometimes the basics are best. And here's a basic one with a little twist.
What You'll Need
- 2 cups of herb-seasoned stuffing mix
- 1 chicken (about 3 pounds), cut into 8 pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup plain nonfat or low-fat yogurt
What to Do

Preheat oven to 350 degrees F. Grease a 9"x13" baking pan; set aside.

Pour the dry stuffing mix into a blender or food processor and process until crumbs form; place the crumbs in a shallow dish. Sprinkle the chicken with salt and pepper, brush with yogurt, then roll in the crumbs.
- Place the chicken in a single layer, skin side up, in the baking pan and bake for about 55 minutes, or until fork-tender and no pink remains. Serve.

Wouldn't it be easier to just use italian seasoned bread crumbs and perk it up with your own spices?
