Lemon Grilled Chicken

It's barbecue-satisfying but light and fresh at the same time. What a nice change from the normally heavy barbecue items.
What You'll Need
- 1/2 cup lemon juice
- 5 teaspoons sugar
- 1 teaspoon olive oil
- 1 bay leaf
- 1/2 teaspoon salt
- 1/2 teaspoon poultry seasoning
- 1/2 teaspoon dried basil
- 1/4 teaspoon black pepper
- 1 (3- to 4-pound) chicken, quartered
What to Do

In a small saucepan, make marinade by mixing together all ingredients except chicken; cook, stirring constantly, over medium heat 2 to 3 minutes. Let cool to room temperature.

Place chicken quarters in a single layer in a large shallow dish Pour marinade over chicken. Cover and marinate in refrigerator 1 to 2 hours.

Remove chicken from marinade, reserving marinade, and place skin-side up on a preheated barbecue grill, about 8 inches from heat source.

Grill, turning every 15 minutes, about 60 minutes or until fork can be inserted into chicken with ease and no pink remains.

During last 30 minutes of grilling, brush generously with marinade. (Be sure to discard bay leaf and excess marinade.)
