Mountain Chicken Melt

Get ready for a mountain of compliments when you prepare this easy skillet chicken dish that's topped with some melty smoke and bacon cheese. Nothing could be easier to make and bring you greater rewards! than our Mountain Chicken Melt.
What You'll Need
- 4 boneless, skinless chicken breast halves
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1 tablespoon olive oil
- 1/4 pound semi-soft smoked Cheddar cheese with bacon, sliced
What to Do

Sprinkle both sides of chicken with salt and pepper.

In a large nonstick skillet over medium-high heat, heat oil. Add chicken; cook 5 minutes or until lightly browned. Turn chicken, and cook 6 minutes or until done.
- Top each breast with 1 smoked Cheddar cheese slice. Cover pan and cook just until cheese melts.
Notes
We used a Smoke and Bacon Cheddar. If you prefer to skip the bacon, this is still pretty amazing with a plain smoked Cheddar.

I am a "chicken lover" when I use thighs or drum sticks I microwave 3 minutes per chicken lb. before sauting. It cooks the chicken thoroughly!
