Orange Blossoms

This has got to be one of the most impressive recipes. It'll be great that your dinner guests love them...but these look so perfect that your guests won't believe you made them yourself! If that's the case, just tell them that Mr. Food gave you a hand in the kitchen!
What You'll Need
- 10 large naval oranges
- 1/2 cup orange marmalade
- 1 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 2 tablespoons brown sugar
- 2 tablespoons honey
- 3 cups cooked long-grain and wild rice
- 3 cups diced cooked chicken (dark meat is preferable)
What to Do
- Preheat the oven to 350 degree F.
- Cut the tops off the oranges one-quarter of the way down, and scoop out the insides. Set aside the orange shells.
- Remove the pith from the orange pieces and place the pieces and juice in a blender or food processor; add the orange marmalade, salt, cinnamon, brown sugar, and honey. Blend until the oranges are chopped, but still chunky. Place in a large bowl and add the rice and chicken; mix well.
- You may have to cut 1/8 inch from the bottom of the oranges so that they'll stand up in the pan. Then fill each orange shell with the mixture and place in two 8-inch square baking dishes that have been coated with nonstick vegetable spray. Bake for 45 minutes or until hot and the rice begins to puff.
Notes
Save the tops that you cut off the oranges and use them to garnish the sides of the baked oranges.
