What You'll Need
- 3 boneless and skinless chicken breast halves, each sliced lengthwise into 8 strips
- 1/2 cup teriyaki sauce
- 2 cups pancake mix
- 3 tablespoons sesame seed
- 1 1/2 tablespoon paprika
- 1/2 teaspoon black pepper
- 1 1/2 cup club soda
- 1 cup vegetable oil
What to Do
- Place the chicken strips and the teriyaki sauce in a medium-sized bowl. Completely cover the chicken with the sauce and allow chicken to marinate for 10 minutes.
- Place the pancake mix in a large bowl. Add the sesame seed, paprika, and pepper. Add the club soda and mix well.
- Shake any excess liquid off the chicken, then dip it in the batter. Heat the oil in a large skillet over medium-high heat. Test the oil to see if it is ready (see below). Fry the battered chicken strips until golden on both sides. Drain on paper towels and serve immediately.
Notes
If these need to be reheated, place them on a baking pan that has been coated with nonstick vegetable spray. Bake at 350 degrees F. for about 15 minutes or until hot and crispy. The oil can be tested by adding a little of the batter to the oil. If it bubbles lightly and turns golden brown, it's ready. If the batter floats to the bottom, it's not ready. If it burns quickly, remove the skillet from the heat and wait for the oil to cool. Then return it to the heat and test it again before adding the chicken strips.
