Polynesian Chicken

After a stressful day, don't you want something that'll transport you to a faraway place? How about a trip to the tropics? Dig into this dish and you're there!
What You'll Need
- 1 1/2 pound boneless, skinless chicken breasts, cut into 1-inch chunks
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1 1/2 cup sweet-and-sour sauce
- 1 (8-ounce) can pineapple chunks, drained
- 2 bell peppers (1 each red and green), cut into 1-inch chunks
- 1/2 cup maraschino cherries, drained
What to Do
- Season the chicken with the salt and pepper.
- Heat the oil in a large skillet over high heat. Cook the chicken for 8 to 10 minutes, or until no pink remains, stirring occasionally. Reduce the heat to medium-low and add the remaining ingredients; mix well. Cook for 3 to 5 minutes, or until heated through. Serve immediately.
Notes
