Roast Chicken and Kiwi with Raspberry Glaze

Want something a little fancy-looking for company? Well, here's a way to make roast chicken look like a million dollars, but it's not harder or more expensive to make?.Like I said, just a little fancy-looking.
What You'll Need
- 1 chicken (about 3 pounds), cut in half
- 1/4 to 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons butter, melted
- 1/2 cup seedless raspberry preserves
- 1/4 cup red or sweet wine
- grated peel of a 1/2 lemon
- 2 kiwifruit, peeled and cut into 4 to 5 slices per kiwi
What to Do
- Preheat the oven to 400°F.
- Sprinkle the chicken with salt and pepper. Place the chicken, skin side up, in a single layer in a 9"x13" baking pan. Brush the chicken with melted butter. Bake for about 45 minutes, basting frequently, or until the chicken is fork-tender and no pink remains. Drain off the fat.
- Meanwhile, in a medium-sized saucepan, mix together raspberry preserves, wine, and lemon peel. Cook over a low heat for about 5 minutes or until slightly thickened. Spoon over the chicken, then baste generously. Top with kiwi slices, dividing the slices evenly over both halves of the chicken.
- Return to the oven and bake about 3 minutes more, or until the fruit and chicken are well glazed.
