Roast Chicken with Curried Honey Mustard Sauce

Here's a nice combination of flavors that smacks faraway exotic places, but it's as comfortable as your own kitchen. And get a load of how easy it is!
What You'll Need
- 4 boneless, skinless chicken breast halves
- 1 small onion, chopped
- 1/3 cup honey
- 1/3 cup spicy mustard
- 1 tablespoon curry powder
- 2 garlic cloves, minced
What to Do
- Preheat the oven to 350°F.
- In a small bowl, mix together all the ingredients except the chicken. Place the chicken, skin side up, in a single layer in a large baking pan.
- Pour the sauce over the chicken and bake for about 1 hour, or until the chicken is fork-tender and no pink remains, basting every 15 minutes
Notes
Serve over hot cooked rice.

Great dish! I used boneless, skinless chicken thighs, couple pounds and doubled the curry, honey, and mustard. served it on rice with broccoli... WOW!
