So many of us grew up on our mom's tasty roasted chicken. If you wanna get that same great taste with a little added kick, we've got the new-and-improved recipe for roast chicken: a little chili powder and a lot of onions!
What You'll Need
- 1 (2 - to 3-pound) chicken, cut into 8 pieces (see Note)
- 2 large onions, thinly sliced and separated into rings
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
What to Do
- Preheat oven to 350 degrees F. Coat a 9" x 13" baking dish with cooking spray.
- In a large bowl, combine all ingredients and toss until chicken is thoroughly coated. Place mixture in prepared baking dish.
- Bake 60 to 70 minutes, or until chicken is no longer pink and juices run clear.
Note
Prep it ahead of time, freeze in individual freezer baggies, then roast in a baking dish when ready to eat!
If you prefer, you can roast a whole chicken rather than cutting it up. Just be sure to coat the chicken completely with the seasoning mixture and cook it for an extra 20 minutes or until no pink remains and the juices run clear.

If you use boneless/skinless chicken breasts they would take 20 25 minutes to cook and the onions would not be cooked all the way. So, you would have to saut your onions first, then cook with chicken breasts.
