Sausage and Chicken Livers

What You'll Need

  • 1/2 pound hot Italian sausage, casing removed, broken up
  • 2 bunches scallions, chopped
  • 1/4 pound mushrooms, chopped
  • 2 celery stalks, chopped
  • 1 pound chicken livers
  • 1 tablespoon soy sauce
  • 2 tablespoons minced fresh parsley

What to Do

  1. Place the sausage meat in a large skillet and sauté over medium-high heat until lightly browned.

  2. Add the scallions, mushrooms, celery; sauté lightly. Add the chicken livers. Cook over high heat for 5 to 10 minutes, stirring occasionally. Stir in the soy sauce. Reduce the heat and simmer for 5 minutes more, stirring occasionally. Garnish with parsley.


Notes

Serve over hot cooked rice.
