Sausage and Chicken Livers

What You'll Need
- 1/2 pound hot Italian sausage, casing removed, broken up
- 2 bunches scallions, chopped
- 1/4 pound mushrooms, chopped
- 2 celery stalks, chopped
- 1 pound chicken livers
- 1 tablespoon soy sauce
- 2 tablespoons minced fresh parsley
What to Do
- Place the sausage meat in a large skillet and sauté over medium-high heat until lightly browned.
- Add the scallions, mushrooms, celery; sauté lightly. Add the chicken livers. Cook over high heat for 5 to 10 minutes, stirring occasionally. Stir in the soy sauce. Reduce the heat and simmer for 5 minutes more, stirring occasionally. Garnish with parsley.
Notes
Serve over hot cooked rice.
