The name says it all...simple, good, and "simply good"! Who knew that a few simple ingredients could come together in a way that's so incredible? We love this simple chicken dinner recipe because it really doesn't take a whole lotta effort to make. Just chop a few veggies, mix it all together, throw it in the oven, and dinner is served!
What You'll Need
- 1 Chicken (2-1/2 to 3 pounds) cut into 8 pieces
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped onion
- 1 can (10-3/4 ounces) tomato soup
- 2 tablespoons brown sugar
- 1 tablespoon seasoned salt
- 1 teaspoon black pepper (or to taste)
- 1/4 cup white vinegar
- 1 tablespoon Worcestershire sauce
- 1 can or jar (about 4 ounces) sliced mushrooms
What to Do
-
Preheat the oven to 325°F.
-
Place the chicken in a 9"x13" baking pan. In a medium-sized bowl, combine the remaining ingredients; mix well and pour over the chicken.
-
Bake, covered, for 65 to 70 minutes, or until the chicken is fork-tender and no pink remains
Notes
Serve over hot cooked rice. If you like the skin to get nice and crispy, you can cover the pan and turn the oven to broil for the last 5 minutes of cooking.

Delicious--made per recipe, but added slightly more onion and peppers--also chopped a couple of fresh tomatoes that were starting to go bad and added two small cans of tomato juice because I like a lot of liquid and added just slightly more of each of the seasonings, including the brown sugar--made with 3 chicken legs, 3 wings and 3 boneless chicken breast--through everything into my pressure cooker and cooked 13-14 minutes--I did take the bones and skin off the chicken after it was cooked (just fell off the bones) Wonderful!!!
