Smoky Chicken Salad

This is chicken salad - with a kick! This Smoky Chicken Salad is perfect between two slices of bread as a sandwich or as an appetizer.
What You'll Need
- 2 pounds (about 6 cups) cooked chicken, diced
- 3/4 cup chopped celery
- 2 to 3 scallions, chopped
- 1/2 cup chopped parsley
- 4 tablespoons lemon juice
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1 large green apple, cored and chopped
- 1 1/2 cup smoky barbecue sauce
- 1 cup mayonnaise
- 1 tablespoon hot pepper sauce
What to Do
- Mix together chicken, celery, scallions, parsley, lemon juice, vegetable oil, salt and apple in a large bowl. Cover, chill in refrigerator for anywhere from 10 minutes to overnight.
- When it's ready, combine barbecue sauce, maynnaise and hot pepper sauce in a separate bowl. Drain off any accumulated juices from chicken mixture then toss it in the barbecue mixture.
