Speedy Chicken Cacciatore

Chicken Cacciatore has always been one of our favorites. This version is even better because it can be ready in a snap without cutting back on all of the flavor.
What You'll Need
- 1 tablespoon olive oil
- 1 (20-ounce) package frozen cooked diced chicken breast
- 1 medium-sized green bell pepper, cut into 1-inch pieces
- 1 small onion, cut into 1-inch pieces
- 1 (9-ounce) package refrigerated angel hair pasta
- 1 (15-ounce) can chunky Italian-style tomato sauce
- 2/3 cup water
- 1/4 teaspoon black pepper
What to Do
- Heat olive oil in a large nonstick skillet over medium-high heat until hot. Add chicken, green pepper, and onion; sauté until chicken is browned and vegetables are crisp-tender.
- While chicken cooks, cook pasta according to package directions. Drain and keep warm.
- Stir tomato sauce, water, and black pepper into chicken mixture. Reduce heat, and simmer, uncovered, 5 minutes, stirring often. Place pasta on each of 4 plates; top each serving evenly with chicken mixture.
Notes
Frozen cooked chicken breasts and refrigerated pasta are what make this a speedy version of the Italian classic. Fresh pasta cooks in 1 to 3 minutes as compared to the 6 to 15 minutes it takes for dried pasta to cook. Put on the pot of water to boil for pasta as soon as you start this dish, and everything will be ready in no time!
