Summer Lime Chicken

Generous amounts of lime juice, garlic, and cilantro create a marinade that only needs to mingle with the chicken for an hour to infuse it with great flavor.
What You'll Need
- 1/3 cup olive oil
- 1/4 cup lime juice
- 3 cloves garlic, halved
- 3 tablespoons minced fresh cilantro
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 4 skinned and boned chicken breasts
What to Do
- Combine first 6 ingredients in a small bowl; stir with a whisk. Reserve2 tablespoons marinade for basting.
- Place chicken in a large resealable plastic freezer bag. Pour remaining marinade over chicken, and seal. Marinate in refrigerator 1 hour, turning occasionally.
- Preheat the grill to medium-high heat (350 to 400 degrees). Remove chicken from marinade; discard marinade. Grill, covered, about 20 minutes or until done, turning once and basting occasionally with the reserved 2 tablespoons marinade.

Oops, I forgot to read the recipe through and missed the "marinade" part completely! So, I just cooked the chicken in a pan on top of the stove in the marinade and after the chicken was done, thickened the sauce and served it over rice. It's a keeper! Next time I'll try it as a marinade.
