    These old-fashioned Sponge Cookies are so light and airy, you'll find that they go great with a mug of something warm or with your favorite side of fresh berries and cream. They're easy to make and loved by all!

    What You'll Need

    • 3 egg whites, well beaten
    • 1/3 cup confectioners' sugar
    • 2 egg yolks
    • 1/2 teaspoon vanilla extract
    • 1/3 cup all-purpose flour
    • 1/2 teaspoon baking powder

    What to Do

    1. Preheat oven to 350 degrees F.
       
    2. Place egg whites in a large bowl and beat until stiff; gradually add in sugar. In a small bowl, beat egg yolks until lemon colored, then add to egg-white mixture and continue beating. Add vanilla extract; beat again.
       
    3. In another bowl, combine flour with baking powder, then fold into egg mixture.
       
    4. Cover cookie sheet(s) with waxed paper. Spoon mixture onto waxed paper, forming 3-inch-long finger-shaped cookies, and bake 8 to 10 minutes or until light golden. Cool slightly, then remove from pan with a spatula.

     

    Notes

    Sprinkle with confectioners' sugar or serve with fresh strawberries and whipped topping and you've got an easy, old-fashioned dessert.

    I have a question for the Mr. Food Test Kitchen Can we substitute these Sponge Cookies for Lady Fingers in dessert recipes? Rachel

    Hi Rachel! The Test Kitchen doesn't think these can be substituted because they are not thick enough, they will most likely fall apart, and get too mushy in the recipes.

    didn't like these at all. Mainly tasted like egg white, second batch added cinnamon and although that helped, I will not make these again

    Do you bake these in the wax paper? Would like to see a picture of these.

    It plainly says lay on wax paper. Read your directions. These r the best tasting cookies. I added. Cinn. to mine. The family loved them.

    I can honestly say I have never seen anything baked on wax paper. Baking sheets, yes, but wax paper?

    Yep, these are baked on wax paper! It's for such a short time in the oven, there's nothing to worry about! If you have parchment paper, you can use that instead.
