Bull's Eye Eggs

Eggs piled high on top of toast are a long-time breakfast favorite, and with this easy version, we eliminate an entire step. Yep, we actually bake the eggs and toast the bread all at the same time! The result is a one-dish wonder.
What You'll Need
- 6 slices white or potato bread
- 2 tablespoons butter, melted
- 6 eggs
What to Do
- Preheat oven to 375 degrees F. Coat a 10- x 15-inch rimmed baking sheet with cooking spray.
- Using a 2-1/2-inch biscuit cutter or knife, cut a circle out of the center of each slice of bread. Place bread slices on baking sheet and brush with half the melted butter then flip and brush the other sides with remaining melted butter.
- Crack eggs one at a time and place an egg in center hole of each bread slice.
- Bake 12 to 14 minutes, or until bread is golden and eggs are cooked through. Serve immediately.
Note
Give the kids an extra-special treat by serving them one slice sunny-side up and a second slice turned over so the eggs look like they're "winking." And maybe make mouths and noses out of the circles cut from the center of the bread.
