What You'll Need

  • 4 refrigerated, full cooked turkey sausage patties
  • 3 tablespoons butter
  • 1 cup fresh spinach
  • 4 frozen whole wheat waffles
  • 5 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tomato, sliced
  • 1/4 cup shredded mozzarella cheese

What to Do

  1. In a large skillet over medium heat, cook sausage, covered, 6 to 8 minutes or until browned and heated through, turning once halfway through cooking. Remove to a plate and cover to keep warm.
  2. In the same skillet over medium heat, melt butter. Add spinach and cook 1 minute or until spinach is wilted. Meanwhile, toast waffles according to package directions.
  3. In a medium bowl, whisk together eggs, salt, and pepper; add to spinach mixture. Stir occasionally, until eggs are set.
  4. Top waffles evenly with tomato, scrambled eggs, sausage patty, and cheese. Serve immediately.

I made this for breakfast this morning. I followed the directions exactly. My partner felt that the waffle was too hard. It was cooked just right, wasn't too dark in other words. The cold tomato made the eggs cold and the cheese didn't melt too well either. It did have good flavor however. Maybe it would be better on top of an English Muffun half instead.
