What You'll Need
- 2/3 cup sugar
- 1/4 cup unsweetened cocoa
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 2 1/4 cups cold milk
- 1 teaspoon vanilla extract
What to Do
- In a medium-sized saucepan, combine the sugar, cocoa, cornstarch, and salt. Gradually stir in the milk. Bring to a boil over medium heat, stirring constantly.
- Remove from the heat and stir in the vanilla.
- Spoon into 4 to 6 individual serving dishes or 1 large bowl and refrigerate for 2 to 3 hours, or until firm.
Notes
- For an elegant look top it with fresh whipped cream or whipped topping and chocolate curls. To make chocolate curls: Use a vegetable peeler to "peel" a thick 5- to 7-ounce candy bar over the whipped cream.

Excellent, easy, fast! I have made this twice. I threw away another chocolate pudding recipe I had because next to this one it was too fussy. You may want to add another tablespoon or two of sugar according to taste. Once the mixture comes to a boil, IMMEDIATELY remove it from heat. It will thicken as it sits in the fridge. Even waiting 15 seconds may make it set up too firm. You will have to determine the texture you want, but I remove it as soon as the first bubbles appear and chill it. Along with whipped cream, the consistency is light and creamy.

My kids really do love pudding, so this is a great recipe to have on hand, rather than running out to the store to buy some. It is also something that can be made quickly, or last minute. And, most of the ingrediants are things you would already have on hand.
