Hot Bacon and Potato Salad

Why in the world do we seem to make potato salad only in the summer? This one will surely make us want to make it a year-round side dish from now on!
What You'll Need
- 5 pounds potatoes, washed and sliced 1/4-inch thick
- 1 teaspoon salt
- 1 pound bacon
- 2 cups mayonnaise
- 1/2 cup sugar
- 1/4 cup white vinegar
What to Do
- Place potatoes and salt in a soup pot and add just enough water to cover them. Bring to a boil over high heat then reduce heat to medium and cook 12 to 15 minutes, or until fork-tender; drain and place in a large bowl.
- Meanwhile, cook bacon until crisp; let cool slightly, then crumble over potatoes. Add remaining ingredients; toss well. Serve hot.
Notes
To give this a little more bacon flavor, add the bacon drippings along with the mayonnaise. And if you like your potato salad on the looser side, add up to an additional cup of mayonnaise. Don't worry if you can't make this right before serving; it tastes just as good chilled as it does hot.

I think I'll stick to German potato salad. Never was crazy about mayo.

Sounds similar to a recipe I have but seems like it's missing a step. My recipe says to warm the vinegar in the bacon drippings pan, add the sugar & some dry mustard to the pan and cook down a bit. Pour over potatoes, add mayo & bacon.
