Sunny Carrot Pineapple Mold

Our Sunny Carrot Pineapple Mold will add a splash of sunshine to your table whenever you serve it. This portable pleaser is also a welcome bring-along to any gathering.
What You'll Need
- 2 (8-ounce) cans crushed pineapple, drained with juice reserved
- 1/2 cup water
- 1 (4-serving) package lemon-flavored gelatin
- 3 large carrots, grated
What to Do
- In a medium saucepan, bring reserved pineapple juice and water to a boil over high heat.
- Remove from heat and add gelatin; stir until dissolved. Add grated carrots and the pineapple; mix well.
- Pour into a 1-quart gelatin mold; cover and chill until firm, at least 4 hours.
- Unmold onto a serving platter and serve.

My Mom made this & mixes a little mayo with pineapple juice & put on the top & let it drip down a bit, after you unmold it. It's good & looks pretty Jimmie
