Timely Marinated Mushrooms

I guess you could say that these marinated mushrooms are very timely 'cause they assemble in minutes, marinate in hours, and disappear in seconds!
What You'll Need
- 3/4 cup vegetable oil
- 1/4 cup red wine vinegar
- 6 garlic cloves, minced
- 1 tablespoon chopped fresh parsley
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound fresh mushrooms, quartered
- 1 large red onion, thinly sliced
What to Do
- In a large bowl, combine the oil, vinegar, garlic, parsley, salt, and pepper; mix until thoroughly combined.
- Add the remaining ingredients and toss until the mushrooms are evenly coated.
- Cover and chill for at least 2 hours before serving.
Notes
If I happen to have any other varieties of mushrooms like cremini, porcini, or even portobello, I cut them all to about the same size and include a mix of all of them for truly unbeatable marinated mushrooms.
