Campfire Pancakes

The tastes and smells of a crackling campfire can't really be duplicated, but when you make these at home on your own griddle you can get pretty close.
What You'll Need
- 3 eggs, well beaten
- 2 cups milk
- 3 tablespoons vegetable oil
- 3 cups all-purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 2 tablespoons sugar
What to Do
- In a medium-sized bowl, combine eggs, milk, and oil.
- In a large bowl, combine remaining ingredients; add egg mixture and mix thoroughly with a wooden spoon until smooth.
- Pour 1/3 cup of batter onto a well-greased, hot skillet or griddle for each pancake. When bubbles form and edges begin to brown, flip pancakes and brown other side.

DEFINITELY use a castirnon griddle or frying pan for these - I cook them in butter (as my Grandmother did) - SO good served with homemade maple syrup!
