What You'll Need
- 2 cups biscuit baking mix
- 1 cup club soda
- 2 eggs
- 1 teaspoon sugar
- 2 tablespoons vegetable shortening plus more as needed
What to Do

In a large bowl, combine biscuit baking mix, club soda, eggs, and sugar; mix well.
- On a nonstick griddle or in a large skillet, melt 1 tablespoon shortening over medium heat. Pour 1/4 cup batter per pancake onto griddle and cook each batch of pancakes about 2 minutes, or until bubbles appear on top. Flip pancakes and cook an additional 1 to 2 minutes, or until golden on both sides, adding more shortening as needed. Serve immediately, or keep warm in a low oven until all pancakes are cooked.
