Orzo Primavera

Here's a light and tasty way to enjoy vegetables and pasta-all in one easy side dish. The rice-shaped orzo makes it so "upscale" that you can serve it with anything from meat to fish to poultry and become a real hero!
What You'll Need
- 7 cups water
- 3 1/2 cups chicken broth, divided
- 1 pound orzo, acini di pepe, or other small pasta shape
- 1/4 cup chopped parsley
- 1 package (10 ounces) frozen peas and carrots combination, thawed
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon minced garlic
What to Do
- In a large pot, combine the water and 3 cups of the chicken broth and bring to a boil. Add the pasta and cook just until tender; drain.
- In a medium-sized bowl, combine the pasta with the parsley, peas and carrots, and the remaining 1/2 cup of chicken broth; toss gently.
- Add the salt, pepper, onion powder, and garlic; mix to blend thoroughly. Serve warm.
