Pasta Caprese

Salad Caprese, the classic salad of fresh mozzarella cheese, tomatoes, and basil, is now a classic pasta dish. (Oh, does that make me happy!)
What You'll Need
- 3/4 cup olive oil
- 1/4 cup balsamic vinegar
- 4 garlic cloves, minced
- 1/4 cup chopped fresh basil
- 1/4 teaspoon crushed red pepper
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 pound plum tomatoes, chopped
- 8 ounces fresh water-packed mozzarella cheese, cut into ½-inch chunks
- 12 ounces wagon wheel pasta or other medium pasta shape
What to Do
- In a large bowl, combine the oil, vinegar, garlic, basil, red pepper, salt, and black pepper. Add the tomatoes and mozzarella cheese and toss until well coated. Allow to marinate at room temperature for at least 30 minutes.
- Cook the pasta according to the package directions; drain, then place in a large bowl.
- Add the tomato mixture and toss until well coated, allowing the cheese to melt slightly. Serve warm.
