What You'll Need
- 1/4 cup (1/2 stick) butter
- 1 cup orzo pasta
- 1 large onion, chopped
- 1 3/4 cup chicken broth
- 1 cup water
- 1 cup long-grain rice
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
What to Do
- In a soup pot, melt butter over medium heat. Add orzo and onion, and saute 6 to 8 minutes, or until orzo is golden and onion is tender.
- Add remaining ingredients; mix well and bring to a boil. Reduce heat to low, cover, and simmer 30 to 35 minutes, or until no liquid remains. Fluff with a fork, and serve.

This recipe is just about as easy to make as that rice - a - roni stuff, but this is much healthier since it is made with real natural ingredients. Not to mention the stuff in the box is loaded with sodium. This is a great go to starch to serve alongside fish, chicken, or even some grilled veggie skewers!

This was quick, easy and good. I used spaghetti, broken into small pieces, as I did not have any orzo. I put the onions, rice and spaghetti into the pan and cooked until they turned light brown before adding the other ingredients. Doing this shortens the rice cooking time. Will make again.

I thought the rice was good. But I suggest cooking the rice a bit before adding the orzo. Or just add more liquid. The rice wasn't done in 30 minutes and it had begun to stick.
