State Fair Pasta

We've turned a state fair classic into an easy weeknight dinner with our recipe for State Fair Pasta. Inspiration came from tour love of hot sausage and pepper sandwiches. We substituted pasta for bread and added some spaghetti sauce so you can feel like you're at the state fair anytime!
What You'll Need
- 1 pound rigatoni or penne
- 2 pounds hot Italian turkey sausage, casing removed
- 3 large bell peppers (1 each red, green, and yellow), cut into 1-inch chunks
- 1 large onion, chopped
- 1 can (28 ounces) diced tomatoes
- 1 jar (26 ounces) spaghetti sauce
- 2 tablespoons tomato paste
- 1/2 teaspoon black pepper
What to Do
- Prepare the pasta according to the package directions; drain.
- Meanwhile, in a soup pot, saut the sausage, bell peppers, and onion over medium-high heat for 6 to 8 minutes, or until the vegetables are tender and no pink remains in the sausage.
- Add the remaining ingredients and cook for 5 minutes, or until heated through and bubbly. Spoon over the pasta and serve.
