Summer Pasta Salad

This is one of those salads that's just right for so many things - a patio party, family picnic, lunch - you get the picture. The only reason we call it "summer" is 'cause it makes us feel as good as summer does.
What You'll Need
- 2 cups ditalini or other small pasta shape
- 1 (16-ounce) package frozen mixed vegetables, thawed and drained
- 1/4 cup finely chopped onion
- 2/3 cup mayonnaise
- 2 tablespoons lemon juice
- 2 teaspoons sugar
- 1 teaspoon dried dillweed
- 1 teaspoon salt
- 1/4 teaspoon black pepper
What to Do

In a medium-sized pot of boiling salted water, cook pasta to desired doneness; drain well and cool. (Rinse with cold water to cool quickly; drain well.)

In a large bowl, combine cooled pasta, mixed vegetables, and onion; mix well.

In a small bowl, combine mayonnaise, lemon juice, sugar, dillweed, salt and black pepper; blend well.

Pour mayonnaise mixture over pasta-vegetable mixture; toss lightly.

Chill before serving.
Notes
Note: Garnish with paprika and serve over lettuce, if desired. If you're not serving the salad immediately, add an additional 1/4 cup mayonnaise to moisten just before serving. If you'd like to make this a hearty main course, add a cup of cooked chicken or beef or some diced cheese.
