Fennel Roasted Pork

Did you know that fennel is a highly aromatic, flavorful herb? You'll love the taste the the pork takes on when you roast it with the fennel. Mmm mmm good!
What You'll Need
- Cooking spray
- 1 (3/4-pound) pork tenderloin
- 1 teaspoon fennel seeds, crushed
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2/3 cup chopped Granny Smith apple ( about 1/2 of a small apple)
- 1/3 cup apple juice
- 1/4 cup sliced leeks or scallions
- 1/4 cup apple juice
- 2 teaspoons cornstarch
What to Do
- Coat cold grill rack with cooking spray. Prepare a hot fire or lava rocks on one side of grill, leaving other side empty. Place rack on grill; let grill preheat for 10 to 15 minutes.
- Meanwhile, trim fat from tenderloin. Combine fennel seeds, salt, and pepper. Rub mixture on all sides of tenderloin. Place tenderloin over empty side of grill; grill, covered, 20 minutes or until a meat thermometer inserted into thickest part of tenderloin registers 155 degrees. Remove from grill, and let stand 10 minutes or until thermometer registers 160 degrees.
- While meat cooks, combine apple, 1/3 cup apple juice, and the leeks in a saucepan. Bring to a boil; cover, reduce heat, and simmer 5 minutes. Combine 1/4 cup apple juice and the cornstarch; stir well. Add cornstarch mixture to leek mixture. Bring to a boil; reduce heat, and simmer, stirring constantly, 1 minute or until thickened.
- Thinly slice pork. Serve with apple and leek mixture.
