What You'll Need
- 1 (1.7-pound) honey mustard pork loin, trimmed and cut into 1-1/2-inch pieces
- 3 assorted bell peppers, cut into 1-inch pieces
- 3 small red onions, quartered
- 6 (12-inch-long) wooden or metal skewers (see Note)
- 1 teaspoon black pepper
- Cooking spray
What to Do
-
Preheat grill to medium heat (300 degrees to 350 degrees F). Thread pork, bell peppers, and onions alternately onto skewers. Sprinkle kabobs evenly with black pepper; lightly coat with cooking spray.
-
Grill kabobs, covered, 6 to 8 minutes on each side or until done.
Notes
If you're using wooden skewers, be sure to soak them in water for at least 15 to 20 minutes before threading the ingredients to prevent burning. If you're in the mood for a variation on this recipe, make Caribbean Pork Kabobs. All you have to do is substitute 1 (1-1/2-pound) pork tenderloin for pork loin and 2 tablespoons Caribbean jerk seasoning for black pepper. Proceed with recipe as directed. Squeeze juice from 1 large lime over kabobs just before serving.
