Inviting Pork Tenderloin

The flavor of oranges with a hint of nutmeg sure is inviting. It definitely invites second helpings!
What You'll Need
- 1 1/2 pound pork tenderloin (2 tenderloins)
- 3/4 teaspoon salt
- 1/2 teaspoon paprika
- 2 tablespoons vegetable oil
- 1/2 cup orange juice
- 1/4 teaspoon ground nutmeg
- 1 tablespoon light or dark brown sugar
- 1 tablespoon orange marmalade
- 1 (11 ounce) can Mandarin oranges, drained and juice reserved
- 2 teaspoons cornstarch
What to Do

Sprinkle pork with salt and paprika; set aside. In a large deep skillet, heat oil over medium heat until very hot but not smoking.

Brown pork in oil 5 to 6 minutes, turning occasionally until evenly browned. Add orange juice, nutmeg, brown sugar, and marmalade.

Reduce heat to medium-low, cover, and cook 25 to 30 minutes or until cooked through, turning once after 15 minutes.

In a small bowl, combine reserved Mandarin orange juice and cornstarch; add to skillet and stir until well mixed. Cook an additional 3 to 4 minutes and remove from heat. Slice across grain and serve topped with sauce and Mandarin oranges.
Notes
Pork tenderloin is often confused with pork loin. Don't be afraid to ask your butcher so you can be sure to get the right one.

My husband and I enjoy this recipe. What I do differently is use a 1# pork tenderloin which I cube and brown. I also use the splenda brown sugar blend and the no sugar added marmalade as my husband is diabetic. This is great served over rice pilaf or couscous.
