Island Breeze Pork

Pineapple and coconut is such a classic "island" taste combination, so why not try it with pork? I think you'll agree that the classics just keep getting better and better!
What You'll Need
- 2 1/2 pounds boneless center-cut single pork loin
- 1 can (8 ounces) crushed pineapple, drained and juice reserved
- 1/2 cup shredded coconut
- 2 tablespoons light or dark rum
- Maraschino cherries for garnish
What to Do
- Preheat the oven to 350°F. Place the pork in a 9" x 13" baking dish that has been coated with cooking spray
- In a medium-sized bowl, combine the pineapple and coconut; mix well. Press the coconut mixture into the pork.
- In a small bowl, combine the pineapple juice and rum; pour over the pork. Garnish with the cherries.
- Bake for 55 to 60 minutes until a meat thermometer registers 160°F. for medium-well, or until no pink remains for well-done. Cut the pork into 1/2-inch slices and serve with the pan drippings.
