Maple Glazed Ham and Sweet Potatoes

When oven space is at a premium, why not cook the ham and potatoes together in the same roasting pan? Not only do the flavors get to mingle, but we get the bonus of easier cleanup of our special holiday meal!

What You'll Need

  • 1 (5 to 6 pound) fully-cooked semi-boneless ham
  • 1 cup maple syrup
  • 1/4 cup orange marmalade
  • 1 tablespoon Dijon-style mustard
  • 8 medium sweet potatoes, peeled and cut into 2-inch chunks

What to Do

  1. Preheat the oven to 350 degrees.

  2. Line a roasting pan with aluminum foil and coat the foil with cooking spray. Place the ham in the roasting pan.

  3. In a large bowl, combine the maple syrup, marmalade, and mustard; mix well. Add the potatoes and toss, coating completely.

  4. Place the potatoes around the ham and use the maple syrup mixture to coat the ham on all sides. Bake for 1-3/4 to 2 hours, or until the ham is golden and the potatoes are fork-tender, basting with the pan juices every 30 minutes.

Notes

Here's a shortcut: You can also use canned sweet potatoes instead of fresh - it'll also cut down on the cooking time.
