Orange Mustard Pork Tenderloin

What You'll Need
- 2 pork tenderloins (about 2 pounds total)
- 1/4 teaspoon salt
- 1/3 cup orange marmalade
- 1 tablespoon spicy brown mustard
What to Do
- Preheat the oven to 350 degrees.
- Coat a 9- x 13-inch baking dish with cooking spray. Place the tenderloins in the baking dish and season with the salt.
- In a small bowl, combine the marmalade and mustard; mix well and brush over the tenderloins.
- Bake for 35 to 40 minutes, or until no longer pink, basting occasionally with the pan juices. Slice and serve.
Notes
In addition to the Parsley Buttered Potatoes, serve this with an easy stir-fry of carrots, broccoli, and cauliflower.
