Peachy Pork Tenderloin

What You'll Need
- 1 cup peach preserves
- 1/4 cup white vinegar
- 2 tablespoons Dijon mustard
- 2 tablespoons vegetable oil
- 2 pork tenderloins (about 2 pounds total)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups fresh peach slices or frozen peach slices, thawed
What to Do

In a small bowl, stir together preserves, vinegar, and mustard; set aside.

In a large skillet, heat oil over medium-high heat. Season tenderloins with salt and pepper and add to skillet. Cook 4 to 5 minutes, turning to brown on all sides.

Reduce heat to medium-low and add preserves mixture. Cover and simmer 18 to 20 minutes, or until pork is only slightly pink in center and internal temperature reaches 160 degrees F for medium, or to desired doneness beyond that.

Add peaches and cook until heated through. Slice and serve topped with peach sauce.
Notes
Serve warm slices of tenderloin over mixed salad greens. Top it with peach sauce and garnish with fresh raspberries.
