Peppercorn Pork Roast

What You'll Need
- 1 (2-1/2-pound) lean boneless pork loin roast
- 1/4 cup creamy mustard blend
- 2 cups soft whole wheat breadcrumbs (about 4 slices of bread)
- 2 tablespoons ground pepper
- 1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme
- 1/4 teaspoon salt

Preheat the oven to 325 degrees. Trim fat from roast. Spread mustard blend over roast.

Combine breadcrumbs and next 3 ingredients; press breadcrumb mixture evenly onto roast. Place roast on a rack in a roasting pan coated with cooking spray. Insert a meat thermometer into thickets part of roast, if desired. Bake 2 hours or until meat thermometer registers 160 degrees (medium). Let roast stand 10 minutes before slicing.

Notes
You can make fresh breadcrumbs from leftover rolls or sliced bread. A food processor does a quick job of making crumbs. Don't toast the bread; it should be soft for this recipe.
